Yuzu, a cute yellow citrus fruit with wonderful aroma

When taking a walk in residential areas in Kamakura, cute yellow fruits often catch your eyes as the air gets colder. They are yuzu (specifically, hanayuzu), a citrus fruit originated in China.

 It has a tart flavour and is rarely eaten as a fruit. But its zest has wonderful aroma and is a must garnish for Washoku, Japanese cuisine, such as pickles, chawanmushi (cup-steamed egg custard), sunomono (Japanese salad), udon noodles, and so on.

In home cooking, yuzu honey and yuzu marmarade are easy to make and make good preservable food, and as one of the special dishes for New Year holidays (osechi), a hollowed yuzu is prepared as a container of Japanese salad as yuzu-gama (yuzu-pot).
