What is Hakata and Nagahama ramen?

 

Hakata and Nagahama are two districts in Fukuoka city, an urbanized city situated at the northern parts of the Kyushu region. Hakata-style and Nagahama-style ramen used to have different tastes but are presently indistinguishable.

 

Hakata/Nagahama ramen have soup made from tonkotsu (pork bones). The pork bones are boiled for an amount of time at high heat in order to extract the rich flavor from the pork bone marrows. The noodles used are thin and white, with a very firm texture.  

 

Tanaka Shoten, unlike the other tonkotsu ramen shops, is an independent restaurant which originated from Tokyo itself. It is not a branch of any ramen restaurant chain from Fukuoka.
