Probably you are thinking it’s just a image of some ice cream, yes that is collect, but this is ice cream with soy sauce!!Yamaroku, Shoudoshima island, Kagawa, is one of the best soy sauce maker I think. They use the oldest method of making it.
They use big “Sugi” cider barrels and need at least 2 years of fermentation process. They are best known for “Tsurubishio”,which is“saishikomi”, after completing 2 year fermentation, add same ingredients then go for another 2 years. It’s taste just amazing. Very mature taste.
