Ramen soup noodle is a culture of Japan. We have many kinds of Ramen noodles.
They originally came from China and we developed their taste in Japanese way.
Ramen basically has 3 types of tastes such as salt based, soy source based, miso ( feamented soy bean paste ) based.
And Ramen needs soup stock to make the base of tastes.
Ramen cheves use soup stocks extracted from dried kelp, dried bonito frakes, sometimes dried herrings, chicken borns or pork borns.
It is said there are more than 35,000 Ramen restaurants all over Japan and each restaurant has each own ratio of soup stock, different kind of oils and ingredients.
Hokkaido is famous for Miso based Ramen. We put boiled corns and a piece of butter on the Ramen as condiments.
