 Harvested persimmons are put in a plastic bag with special alcohol and sealed for about a week to remove astringency.

Persimmon harvest in full swing in Sado Island.This is the busiest season in a year for me!  From early October until mid-November, we pesimmon farmers have to harvest, sort out and ship them.
